Packing Your RV Refrigerator for a Weekend Road Trip

The weekend's short – and you don't want to spend your relaxation time running to the grocery and prepping food.

Meal planning is an easy way to ensure that you don't have to stop at the grocery along the way. Make a list of the things you need to have in the fridge before going. Think 3-meals a day, with snacks here and there to make sure you have plenty while you're on the go.

Simple Breakfast & Lunch On-The-Go

Low maintenance for most breakfasts can make for a quick start to the day (yogurt, grapefruit, and bagels with cream cheese are a few crowd favorites). And if you tend to keep busy throughout the day, keep packable meals on hand. Sandwiches, Lunchables…whatever works.

Hobo Pizza Pie Recipe

Equipment:

Square Pie Iron - Cast Iron

Ingredients:

Directions:

  1. Butter two slices of bread
  2. Place the buttered sides down in the pie iron.
  3. Scoop pizza sauce onto both pieces of bread and spread
  4. Put shredded mozzarella cheese on one slice (you will need to pick up one of the handles to close your pizza, and you don't want the toppings to spill out).
  5. Top the cheese'd slice with your favorite toppings (pepperoni, sausage, olives, mushrooms, tomatoes, etc.).
  6. Cook over the fire, checking now and again to see how the outside is browning. 
  7. When it's to your liking, open the pie iron and transfer the sandwich to a plate (PRO TIP: Tapping the iron a few times helps to loosen the sandwich before opening. 
  8. Enjoy! 

Cut up your vegetables and brown the sausage before you leave. Then, place them (with shredded mozzarella and pepperoni) in separate plastic containers to store in your RV refrigerator

Certain things just belong in a fridge – ketchup, mustard, mayo, and ranch. You'll want to add those to your shopping list. You can often find small containers to transfer some of your existing condiments to save space in your fridge.   

Stocking Your RV
